Lobster Grilled Cheese

ingredients

  • 8 oz Castello® Aged havarti, shredded
  • 8 slices of Thick-Sliced Brioche bread
  • 2 tbsp mayonnaise
  • 2 tbsp butter, softened
  • 4 lobster Tails, steamed and chopped
  • 1 tbsp lemon juice
  • salt and pepper, to taste
  • ½ tsp Old Bay seasoning
  • Finely Chopped chives, for garnish

preparation

1) Combine mayonnaise and softened butter in a small bowl and set aside.

2) Steam the lobster until fully cooked. Remove the meat and chop it into ½-inch pieces. Toss with lemon juice and Old Bay and set aside.

3) Preheat a non-stick skillet over medium heat. Meanwhile, generously spread the mayonnaise/butter mixture on one side of each slice of bread.

4) Layer each sandwich with 1 oz of the Castello Aged Havarti Cheese, followed by a layer of lobster pieces, salt and Pepper to taste, and a sprinkle of chives. Next, add one more oz of Castello Aged Havarti Cheese and the top slice of bread.

5) Grill the sandwiches on the preheated skillet for about 4-6 minutes per side until the cheese melts, and the bread is beautifully golden and toasted.

6) Serve immediately.
