Bacon Gouda Mac and Cheese

ingredients

  • 1 pound Orecchiette pasta
  • 6 slices Thick Cut bacon
  • 4 tbsp salter butter, divided
  • 2 tbsp all purpose flour
  • 2 cups whole milk
  • 7 oz Castello® Gouda Cheese cheese, shredded
  • 7 oz Sharp cheddar cheese, shredded
  • salt and pepper to taste
  • ½ cups Panko breadcrumbs
  • 1 tsp paprika
  • ½ cups grated parmesan cheese cheese

preparation

1. Cut the bacon into 1" pieces and then cook until crisp in a cast iron skillet. Remove the bacon onto a paper towel lined plate to drain. Remove all but 2 TBSP bacon grease from the pan.

2. Cook pasta according to package directions minus two minutes. You want the pasta to be al dente as it will finish cooking in the cheese sauce. Preheat the oven to 350.

3. Melt 2 TBSP of the butter in with the bacon grease. Once butter is melted, sprinkle in the flour. Cook the flour for 2 minutes. Then while whisking, pour in the milk. Keep whisking until no clumps of flour remain. Season with salt and pepper.

4. Save back 1/4 C each of the gouda and cheddar cheese.
