To serve

Cut grapefruits in half.

Tips & Tricks

Ensure the puff pastry dough is well-chilled before starting. Roll it out on a lightly floured surface to prevent sticking, and handle it minimally to maintain its flakiness. Use a sharp knife or pastry cutter for clean edges. For the best results, chill the prepared dough squares in the muffin tin for 10-15 minutes before baking. This helps the pastry stay crisp and puff up in the oven.

Tips & Tricks

Play around with the consistency of the brie. Instead of letting them cool, add the brie to the puff pastry bites when they are fresh from the oven. This way, the cheese will soften and become extra creamy.

Prepare an extraordinary sandwich for breakfast or lunch

Layered on flavourful sourdough bread and seasoned with fresh thyme, sea salt, and pepper

Treat your sandwich to the best bread with thick slices of tangy sourdough. Use it as it is or toast it, allowing a generous spread of butter to melt slightly and add a subtle richness that enhances the other ingredients. But the sandwich is more than its bread and fillings. The seasonings, garnished as the final touch, give you a surprising sensation that enhances the overall experience. Finish with a sprinkle of fresh thyme, a pinch of sea salt, and a dash of freshly ground black pepper.

Ideas for adjusting the recipe

Upgrade your sandwich with a few flavourful experiments. Start by adding another sweet element, such as a drizzle of honey, sweet apricot jam, or fig jam, over the brie. This touch of sweetness perfectly complements the creamy cheese and salty serrano ham and highlights the fresh apricot. For a touch of green, explore different types of salad greens, for example, fresh rucola or baby spinach. Consider adding roasted red peppers or pickled red onions for an extra burst of flavour or a few crispy slices of bacon to elevate the sandwich with a smoky, savoury note.

Instead of using plain butter, try herb-infused or garlic butter to add an extra layer of flavour to the bread. If you enjoy a bit of spice, add a touch of heat with crushed red pepper flakes or a thin layer of chilli jam. For a richer, caramelised flavour, lightly caramelise the apricot slices in a pan with butter and brown sugar before adding them to the sandwich.

Additionally, you can grill the sandwich like a panini or slightly caramelise the brie with a kitchen torch for a gooey, melted layer that blends beautifully with the other ingredients. Finally, swap the fresh thyme with other herbs, such as basil, mint, or rosemary, for a unique twist on the flavour profile.
